Yamaha DD-65 (bought early 2007), Mac, Garageband, EZdrummer 2).

In the main menu of EZdrummer 2 – go into Settings > E-drums, and select Yamaha as the MIDI mapping.
You can also try to change pedal correction to see if any of the presets makes the hi-hat work better.
If you want to manually change the MIDI mapping, then this has to be done in your host, in your case Garageband. Not sure on how (or if) garageband can do that.
The mapping can most of the times be changed on the e-kit, not sure how it’s done on your model though…
