I am running OS 10.6.8 on my Mac still, having to stay with that for some audio reasons. And I’m still using Logic 7, and eventually to Logic 8.
I downloaded the EZDrummer demo to see if it will install and run on my system, and it does. But the demo says it is version 2.1.8. I read somewhere that version 2.1.8 was still usable in Snow Leopard. But I’m assuming that the latest 2.2.1 would not work in Snow Leopard.
Can I purchase the full EZDrummer and still get the 2.1.8 version instead of the most current update?

Yes, version 2.1.8 is still available and is the last one that works on Snow Leopard.

That is great. Do I have to do anything special to get the 2.1.8 version if ordering online? Also what if I ordered from a 3rd party like Sweetwater instead?
I would want to avoid accidentally installing 2.2.1 instead.
You don’t have to do anything special. Use the Toontrack Product Manager to install EZdrummer 2 and it will not show 2.2.1 as a recommended update on systems lower than 10.9. The 2.2.1 installer also requires 10.9, so you can’t accidentally install it.
